This Chia Pudding ticks all the boxes: sweet, creamy, luscious AND nutritious. And the best part is you can make it the night before. Cheers to very sweet dreams!
Overnight Chia Coconut Pudding
Makes 8 servings.
Ingredients:
- 2 cups unsweetened coconut milk
- 1 cinnamon stick
- ¼ cup maple syrup
- 1 tsp molasses
- 1 Earl Grey tea bag (regular or decaf)
- ¼ tsp fine sea salt
- ½ tsp ground cardamom
- 1 tbsp pure vanilla extract
- ¾ cup chia seeds
- 1 tbsp ground flax seeds
- 1 banana (optional, sliced, for garnish)
- ½ cup mango (optional, cubed small)
- ¼ cup dried unsweetened coconut (optional garnish)
Directions:
In a medium saucepan, combine the coconut milk, cinnamon stick, maple syrup, molasses, tea bag, salt, cardamom, and vanilla. Cover and cook on medium-high heat until it comes to a very gentle boil. Remove from heat and allow to sit for 2 to 3 minutes. Remove the teabag and cinnamon stick. Add the chia seeds and flax seeds and stir until smooth and thoroughly combined.
Scoop 1/4 of the mixture into small bowls and cover with plastic wrap. Refrigerate overnight (about 8 to 10 hours) and up to two days. To serve, garnish with banana, mango, and coconut - or any fruit toppings you prefer.
